Alkaline Diet Recipes: Delicious Summer Squash Soup

Ingredients (4 servings)

4 medium-sized summer squash (~900 grams)

2 spring onions or a regular onion

4 medium-sized carrots (~300 grams)

2 tsp of garlic powder

½ tsp of paprika

½ tsp of basil

1 tsp of pink Himalayan salt

juice from ½ lemon

Fresh parsley leaves

Sesame seeds (optional)

Inactive yeast flakes (for that amazing parmesan flavour!)

Finely chopped almonds or almond flour (optional)

Recipe

Wash and peel the vegetables, chop them up and place them in a pot. Add the garlic, paprika, basil, and salt. Fill the pot with just enough water to pass over the vegetables. Bring it to a boil, cover the pan with a lid and let it simmer for about 20-25 minutes. Add the lemon juice and mash them up. Before serving the soup, add sesame seeds, a tsp of finely chopped almonds, half a teaspoon of inactive yeast flakes, and a few parsley leaves. 

We must warn you – this soup is easy to make, but there’s a catch: it disappears in seconds!
